Zucchini Brunch

This is the perfect brunch dish but we make it up for supper too!

1/4 cup butter

3 cloves garlic, minced

2 onions, chopped

1 cup mushrooms, sliced or quartered

2 cups zucchini, diced finely

dash of hot pepper flakes or hot sauce

1 tsp. oregano

1 cup diced ham(cooked shrimp works too)

6 eggs

1/2 cup milk

2 cups Swiss or Cheddar cheese

1 tsp. ground black pepper

1/2 tsp. parsley


Saute vegetables in butter. Mix eggs, milk, ham or shrimp, herbs and seasonings in a large bowl. Mix well. Add cooked vegetables to egg mixture. Pour into a greased 9 X 13 baking pan. Bake at 350 deg. F for 45 minutes.
