A wonderful dish that takes only minutes to prepare.
1 cup mushrooms, sliced
1/2 cup onion, chopped
2 cloves garlic, minced
2 tbsp. butter
2 cups spinach, fresh, chopped or 1 pkg. frozen spinach, thawed
250 gr. pkg. cream cheese
1 medium tomato, chopped
1/4 cup grated Parmesan cheese
1/2tsp. each basil and oregano
1/4 tsp. salt and ground pepper
300 gr. cheese-filled tortellini
Saute mushrooms, onions and garlic in butter in a large skillet. Add all remaining ingredients except tortellini, mix well.
Cook tortellini according to package directions in a separate pot.
About halfway through the cooking of the pasta, heat sauce mixture just to boiling, stirring occasionally. Once pasta is cooked and sauce has just boiled slightly, stir drained tortellini into sauce; cook until thoroughly heated and serve.
