Tipi Creek Potato Salad
This is more of an "in my head-no actual recipe" recipe. So be creative and free to add whatever your family enjoys but the potatoes, onions, celery, eggs, mayo and mustard are vital.
New potatoes (2-3 lb.)
4 hard boiled eggs
3-4 green onions (white and green parts)
2-3 celery stalks
Approx. 3/4 cup Mayonnaise
Mustard to taste
Salt and Pepper to taste
Optional ingredients may include: radishes, shelled peas, pickled carrots or cucumbers
Steam potatoes then refrigerate to chill completely. Cube potatoes, slice onions, celery, and eggs in a large mixing bowl. Combine mayonnaise and 1 tbsp. mustard. Add to vegetables. Check seasonings and add salt, pepper and more mayonnaise or mustard as required.
Chill and keep refrigerated until ready to serve.
