Spinach & Ruby Red Grapefruit Salad

This is Cheryl's recipe using fresh spinach. So simple yet so delicious!

2 lb. fresh spinach
1 Ruby Red grapefruit

Poppy Seed Dressing
3 tbsp. champagne or white wine vinegar
3 tbsp. honey
Juice of one lemon
1/4 cup olive oil
1/2 cup vegetable oil
1/4 cup poppy seeds
1 tsp. pepper
Salt to taste

Combine all the dressing ingredients; mix thoroughly and refrigerate until ready to use.

Wash, stem and dry the spinach; place in a large bowl. Peel and section the grapefruit. Combine with the spinach in a bowl. Pour the dressing over the salad and toss gently. Serve immediately.
