Spicy Ginger Lime Vinaigrette
A great flavour combination, with an oriental twist, will keep in the fridge for weeks.
1 tsp. finely minced fresh ginger
1/8 tsp. granulated sugar
1/2 tsp. finely grated lime zest
2 tbsp. plus 2 tsp. fresh lime juice
1/2 tsp. minced garlic 1 tsp. white wine vinegar
1/4 tsp. Dijon mustard 6 drops Tabasco sauce
1/4 tsp. salt 1 cup Grapeseed or Safflower Oil
In a small bowl, whisk together the ginger, lime zest, mustard, salt, sugar, lime juice, vinegar and hot sauce. Slowly whisk in the oil until the dressing is creamy and blended.
Taste to adjust the seasonings.
