A family favourite on ice cream, cake or by itself.
6 cups rhubarb
1 1/2 cup white sugar ( may be reduced to as little as Â¾ cup)
3/4 cup Water
Clean and slice the rhubarb into 1/2 inch pieces.
Place rhubarb in casserole with a tight fitting cover. In a saucepan bring the water and sugar to a boil. Pour the syrup over rhubarb and cover casserole. Bake at 350 deg F for 30 min. DO NOT STIR AT ANY TIME!!! Remove from oven and let cool in casserole. Serve warm or cooled, great taste either way.
Substitute cup for cup up to 2 cups of saskatoons, blueberries, sliced strawberries, canned or fresh pineapple and cook along with the rhubarb.
