Muskoka Salad
This recipe came in the booklet accompanying our first BBQ. it is a simple salad with a great combination of flavours!
1/2 cup slivered almonds
1 tbsp. brown sugar
1 tsp. honey
5 cups mixed salad greens, washed
5 green onions, thinly sliced
1 cup orange sections
2 avocados, peeled and chopped
Dressing
1 tbsp. lemon juice
1 tbsp. balsamic vinegar
1 tsp. Dijon mustard
1/2 cup olive oil
salt and pepper to taste
In a small skillet, over med-low heat, combine the almonds and sugar and stir constantly until the sugar caramelizes on the nuts, about 5 minutes. Remove from heat immediately and spread on a plate to cool. Break them apart.
To prepare the salad dressing, combine the lemon juice, honey, vinegar and mustard in a large bowl. Whisking constantly drizzle the olive oil in a thin stream. Season with salt and pepper to taste.
Prepare the onions, oranges and avocados and toss them with the dressing. At the last minutes prior to serving, add the chilled lettuce leaves and sprinkle the almonds over top and toss gently.
