Gremolata

Gremolata is a classic Italian combination of lemon zest, garlic and parsley. Use it to add a fresh touch to pasta (recipe below), risotto, sauteed swiss chard (recipe included in side dishes) or steamed green beans. This would also be a great way to prepare beet greens.

2 tsp. finely grated lemon zest (from about 1 lemon)

1 small clove garlic, very finely chopped

1/3 cup minced fresh parsley


Combine the parsley, garlic, and lemon zest on a cutting board and chop them together with a chef's knife until the parsley is finely chopped and mixed well with the lemon and garlic. Use immediately or keep in fridge overnight to blend flavors.
