Green Beans with Pancetta, Garlic & Herbs

Another great bean recipe from the Fine Cooking feature on cooking fresh beans!

1 tbsp. olive oil
4 ounces pancetta or bacon, diced
3 med. cloves of garlic, chopped
1/2 lb. fresh green beans
1/2 tsp. salt
3 tbsp. fresh parsley, chopped
2 tsp. fresh rosemary or basil
freshly ground pepper to taste

Heat the oil in a med. skillet over medium heat until it shimmers. Add the pancetta or bacon and cook, stirring frequently, until the fat is rendered and the pancetta is slightly crisped. Add the garlic and beans, and toss to coat with the oil.

Add enough water to cover the bottom of the pan. Add the salt. Simmer until the beans are fork-tender and the liquid has cooked down to a thick sauce, approx. 25 minutes. Toss in the herbs, season with the salt and pepper and serve.
