Fresh Spinach Salad
This recipe dates back to when Ron & I were first married, it was my first spinach salad and although we make various other salads with spinach we still enjoy this one very much. It is a heavier main-dish salad.
5 - 6 cups spinach, washed
3 hard cooked eggs, sliced
1 cup mushrooms, sliced
6 slices bacon, fried and crumbled (optional but delicious)
Salad Dressing
9 tbsp. vegetable oil
3 tbsp. apple cider vinegar
2 cloves garlic, crushed
3/4 tsp. salt
1/4 tsp. freshly ground pepper
1/4 tsp. mustard
Mix spinach, mushrooms, egg and bacon in a large salad bowl.
Combine oil, vinegar, garlic, salt, pepper and mustard in a jar with a tight fitting lid and shake to blend.
Just prior to serving, pour dressing over spinach mixture, tossing to coat well. Makes 6 servings.
