Fattouche

This is one of the standard Middle Eastern salad that used lots of fresh parsley and mint, a nice fresh summery flavour.

1 medium cucumber
1 stale pita bread
1 cup coarsely chopped onion
4 scallions, coarsely chopped
4 tablespoons finely chopped parsley
4 medium tomatoes, coarsely chopped
2 tablespoons chopped fresh mint
Small head lettuce, shredded (optional)
Juice of 2 large lemons
6 tablespoons olive oil
2 cloves garlic, crushed
Salt and pepper, to taste

Chop the cucumber, then sprinkle with salt and leave it to stand for 30 minutes. Rinse well and pat dry. Break the bread into small pieces and put in a large mixing bowl. Add the chopped onions, scallions, lettuce, parsley, tomatoes, mint and cucumber. Mix together well.

Now make a dressing with the lemon juice, olive oil and garlic. Season with salt and black pepper and pour over the salad mixture. Toss together well and chill before serving.
