Caesar Salad

For as many years as I can remember, I have been making this Caesar Salad for family potlucks. My brothers have renamed it the "Garlic Salad" because the dressing is definitely full of the fresh garlic flavor. Decrease the amount of garlic if you don't like it quite so pungent.

One large head romaine lettuce

1/4 cup crisp-cooked bacon pieces

3/4 cup croutons

1/4 cup Parmesan cheese


Dressing:

1 egg

2-3 cloves garlic, crushed

1/4 tsp. Worcestershire sauce

1/2 tsp. salt

1 tsp. dry mustard

2 tbsp. lemon juice

3/4 cup sunflower oil


Wash and break lettuce into small pieces, add the cooked bacon pieces, croutons and Parmesan cheese.


In blender jar, add egg, garlic, Worcestershire sauce, mustard, salt and lemon juice. Blend for 30 seconds. Gradually add the oil while still blending; this will slowly change to a thick dressing. Add dressing to salad and serve.


NB. To prepare in advance, have lettuce, bacon, croutons and cheese in salad bowl. Prepare dressing as above and keep refrigerated. Add dressing to salad just prior to serving.
