Bruschetta

The following is the bruschetta recipe our family loves. It is absolutely fabulous and we seldom have any leftovers.

    2 medium   tomatoes, finely diced
   1/4 cup chopped ripe pitted olives
   1 cup Havarti cheese, grated
   1/4 cup grated Parmesan cheese
   2 small cloves garlic, crushed
   1 tsp. dried oregano
   1/2 tsp. freshly grated pepper
   1 - 1 1/2 tsp. sliced fresh basil
   1 baguette, Approx 2" round, cut in 1"slices

In a small bowl, mix tomatoes, olives, cheeses, garlic, oregano, pepper and   basil. Arrange baguette slices on greased baking sheet (parchment lined   baking sheet is even better for great clean-up). Divide tomato/cheese mixture   among slices and spread. Bake at 350ยบ F oven for 15 minutes until topping is   hot and bubbly. Serve warm. Makes about 2 dozen appetizers.
