Basic Quinoa Pilaf

Quinoa is one of the ancient grains native to Peru. It is very high in protein and very mild tasting. The bonus is that it cooks up even quicker than rice so it is always included in our quick food menus.

2 tbsp. butter

1/2 cup finely chopped onion

1/4 cup finely chopped celery

3/4 cup Quinoa or Millet

1 1/4 cup chicken or vegetable stock

1/2 tsp. salt(less if stock is salty)

2 tbsp. chopped parsley

Salt and Pepper to taste


In large heavy saucepan over medium-high heat, melt butter. Add onion and celery; cook until softened but not browned, about 2 minutes. Add Quinoa or Millet and cook, stirring often, for about 2 minutes. Stir in stock; bring to a boil. Reduce heat, cover and simmer for 15 minutes or until Quinoa is tender and liquid is absorbed. Stir in parsley, salt and pepper. Makes about 4 cups.
