Sauteed Swiss Chard with Sun-Dried Tomatoes & Feta
By adding cooked pasta to the vegetables, this side dish quickly becomes a main dish.
6 oil-packed sun-dried tomato halves, drained and cut into thin strips
1 cup feta cheese, crumbled
1/2 tsp. lightly chopped fresh thyme leaves
1 recipe Sauteed Swiss Chard (recipe included in Vegetable Side Dishes)
Combine the sun-dried tomatoes, feta, and thyme in a bowl.
Make the basic Sauteed Swiss Chard: add the sun-dried tomato mixture at the end, toss, and serve immediately. Makes 4 servings.
